It is low in calories, but rich in vitamins and minerals, all of which are found in its seeds, leaves, and juices. There are many ways people can eat more pumpkin. Preparing fresh pumpkin at home will provide more health benefits, but canned pumpkin is also a great option. Pumpkin retains many of its health benefits in the canning process.
