Its balance is exquisite between its fine acidity and delicate citrus. It has a special condition: the round seed concentrates better its flavor and caramelization. Only one flower ovary is fertilized what causes the seed to obtain round characteristics for developing alone in the fruit, achieving superior hardness and density conditions that allows it to be kept in the roaster for longer obtaining less bitter coffee.
