Sechium edule, is the scientific name. The Criollo chayote or also known as black is another diverse variety of chayote. It is a bit bigger and meatier, its skin is thicker. The word chayote comes from the Nahuatl word ""hitzayotli"", which means spiny zucchini. It is a fleshy, juicy vegetable, with a slight flavor, from the cucurbitaceae family and with a very tasty seed. It is oval in shape and is generally green in color. The pulp of the fruit is whitish in color and in the center it has a single flat and smooth seed, surrounded by a fibrous formation.
